CHOCOLATE LIME CHEESECAKE

My inspiration here was a sweet - those chocolate limes I ate in my childhood. The base is rich and dark and perfectly counters the light, tender cream-cheese custard above it, itself kept all the more delicately smooth by being baked in a water bath (and this is easy: don't let a bit of wrapping in foil and boiling a kettle put you off before you start) and made intensely, fragrantly sharp by having the juice of four uncompromisingly sour limes squeezed into it.

Tangy Chocolatey Awesomeness

I have had this cake twice, and both times I haven't been the one to make it, bizarre in my circles as I am the lone baker but nonetheless true! The 1st time I had it my best friend (read gay husband) decided to throw a dinner party and wanted to cook everything from scratch, bear in mind he never cooks - which meant I took off half a day of work to help him in the kitchen all afternoon and night b4 hand, anyway... he borrowed my Nigella bites cookbook and ended up making the entire dinner party from it (which as a total Nigellaphile I loved) and the desert was the choc lime cake - the only thing he made on his own and in advance! The 2nd time I had it he made it again for a BBQ I was having at my place. Not only is this cake easy (as my friend can atest to) but its delicious and suprisingly bitey and comforting at the same time, the lime with the cheese and choclate shouldn't work - but does, beautifully.

Creamy and tangy, perfect for a make ahead desert!

I made this sometime last year and it went down a treat with our family! I would definately recommend making it the day before you plan to serve it as I found it was much more creamy once it had set well over night. The chocolate in the base makes a nice change from plain biscuit and i added some lime zest on top for extra tang. Mmmmmmmmm!
