I took it into my head one day that I wanted to marinate and cook some chicken with the flavours of a traditional sage-and-onion stuffing. So onion, mustard, sage and lemon infuse the jointed bird, and sausages are cooked alongside the pieces in one big pan. I started off with English butcher's sausages but this works just as well with Italian sausages (no bread, so good for carb-avoiders) and also, though taking on a different character, with spicy Spanish chorizo. As you can imagine, it is hardly any work, and if you haven't got time to give a proper night's martinating in the fridge, then leave…

One Pan Sage and Onion Chicken and Sausage

This is super delicious! It has become a new family favorite. I love it because it is so easy to put together. The way the flavors marry together is superb!

Minimum Effort - Great Taste!

I made this for lunch on New Years Day. Had not done it before so it was a bit of a risk but sounded so easy and straight forward, it was just what I was looking for. I used chicken joints and a pork and caramelised red onion sausage and it turned out fantastic - everyone enjoyed it - clean plates all round. I've make it a couple of times since and each time have not been dissapointed! Great one pan dish and if you use a foil container no washing up either!
