My stuffed pumpkin ended up being a stuffed acorn squash, because it turns out my local grocery store doesn't sell pumpkins after Halloween! I used saffron rice, added chanterelles, and then sprinkled it all with pistachios and dried cranberries for a more festive look. It was fabulous!
