I used a different pumpkin for the recipe, I love the vibrant orange color of this one. Besides a bigger one doesn't fit in my oven, I even had to cut the top part off this one, otherwise it wouldn't fit. But it turned out wonderfully, the pumpkin became so soft and combined with the rice it was the perfect dish for a cold autumn night. :)
