I'm just wondering is it possible to use dried cranberries instead of fresh or frozen, as im having difficulties trying to get hold of fresh cranberries at the mo.

David I think it would work, but I would soak the cranberries first. Possibly in some brandy?

Great - and while you're out getting those - get some extra ones to join in on this months' cookalong!

If you don't want any liquor in the recipe, just rehydrate the dried cranberries in HOT water for 20 minutes or so and they will plump up. If you en up cooking them they will plump up even more almost to the point where you wouldn't know they were once dried. :)

David, I asked about this last weekend. I was only able to get dried ones but since it was being cooked for a while in white wine vinegar, I reckoned there was no need to soak them. I`ve not tasted this but the mixture looks good.
