  • A weekend without kitchen kit

    Dear Team Nigella, I'm going on a weekend trip to a vacation cottage that has a full kitchen, but as I understand it, no pots/pans/cups/knives/etc - a totally unfurnished kitchen! Unfortunately there's no outdoor grill either as it's in a snowy winter destination. There's 6 of us total going, and I'm going to make a dinner for everyone but I'm at a loss of what kind of recipes should be attempted with very little equipment - I'm going to have to travel light. I will be stopping at their local market so I should be able to pick up disposable plates, utensils, etc. Thanks for your help!!

    We would suggest adding some large disposable aluminum foil pans (such as Handifoil) to your shopping list and utilizing the oven as much as possible. There are plenty of dinner options that can be made just with an oven. Some ribs and baked potatoes would provide a hearty dinner using only the oven and the Maple Chicken 'n' Ribs from Nigella Express (p110) are easy and don't have a long list of ingredients to buy, or if you have a well-stocked pantry then the Conker Shiny Spare Ribs with Pineapple and Molasses from Kitchen (p392) are bound to please. You can marinate the ribs for both of these recipes in large resealable bags.

    Nigella also has some pan-baked meals in Kitchen which would be ideal - try Spanish Chicken with Chorizo and Potatoes (p100)Roast Duck legs and Potatoes (p388) or Chicken with 40 Cloves of Garlic (p326, serve with Standby Starch p211 or Arugula/Rocket and Lemon Cous Cous p90 as you only need to boil a kettle for these or make a Gratin Dauphinoise in another foil pan). For dessert you can make brownies if there is a microwave and a heatproof pitcher available to melt butter - try the Everyday Brownies from Kitchen (p217), or assemble a "free-form" trifle such as Orange and Blackberry trifle from Kitchen (p171) or the Ginger Passionfruit Trifle from Express (p226). We would suggest trying to pack a wire whisk to whip the heavy cream as they are not heavy and wouldn't take up too much space in your bags and try to buy something like a disposable salad bowl to whip the cream in.
