  • Anglo-Italian Trifle

    What can I use as an alternative to the amaretti biscuits in Nigella's Anglo-Italian Trifle? I have a nut allergy but am conscious of keeping the textures/flavours right.

    From the nigella team:

    Nigella's Anglo-Italian Trifle (from Forever Summer) uses a combination of trifle sponges (the Anglo part) and amaretti biscuits (the Italian part). The amaretti biscuits should be the crisp type and not the soft type. The good news is that most amaretti biscuits are made with the kernels of apricots rather than with almonds. 

    Obviously it is important to read the ingredients list of any amaretti biscuits that you buy, to check that they are suitable. Occasionally also people who are allergic to almonds can be allergic to apricot kernels so you may need to check this too.

    If you would still rather avoid the amaretti biscuits then you would need to use a biscuit with a slightly dry and crumbly texture. The closest alternative we can think of would be a ginger nut biscuit and the ginger flavours would work in the Anglo-Italian Trifle.

    Obviously the flaked almonds should be omitted from the topping, but you could use your favourite coloured sprinkles or decorate in retro style with glace cherries.
