Chocolate Chip Cookies With a Hand Mixer

Full question

I would like to make Nigella's Chocolate Chip Cookies, but I don't have a stand mixer. So I would like to know if I can use a hand mixer to mix the dough? Thanks.

Our answer

Nigella's Chocolate Chip Cookes (from Kitchen and on the Nigella website) are made by beating together melted and cooled butter with sugar and then beating in eggs and vanilla extract. It is certainly possible to do this with a hand mixer rather than a free standing mixer. You could also do this with a bowl, a wooden spoon and plenty of elbow grease.

However when you mix in the flour and chocolate chips you may prefer to do this by hand. The mixture is a little stiff and whilst this is fine for a free standing mixer which is fairly robust, a hand mixer usually has beaters made from thinner metal and can struggle a little with this step. It is very easy to mix in the flour by hand and you can use a large metal spoon, a wooden spoon, a silicone spatula or any similar implement.
