  • Chocolate Fudge Wedding Cake

    Hi, I am making Nigella's Chocolate Fudge Cake a a tier for a wedding cake and I am wondering if it is possible to cover this with sugarpaste or would the sugarpaste be to heavy for this cake? It is going to be the middle tier .

    From the nigella team:

    Nigella's Chocolate Fudge Cake (from Nigella Bites) is a rich chocolate cake that is very popular. It isn't a particularly dense cake but it should be able to take the weight of sugarpaste (rolled fondant icing), provided that you roll the fondant very thinly. We would suggest that you use a buttercream icing in the filling and coat the outside of the cake in a smooth coating of chocolate ganache (made with equal weights of dark chocolate and double/heavy cream). The smooth ganached cake should be left in a cool place overnight to set and it will help to take some of the weight of the fondant. You can also roll the fondant more thinly if you make the ganache coating very smooth.

    Otherwise it may be worth condsiering Nigella's Devil's Food Cake (from Kitchen) which is also very rich and a slightly denser cake.

    However we would be worried about the ability of the cake to support the weight of a top tier when the cakes are stecked. You will need to make sure that the bottom and middle layers have suitable dowels in to support the weight of the cakes. Dowels are available from cake decorating stores and we would check carefully on the size and type of dowel that is required.
