  • Chocolate Sauce For Flourless Brownies

    Can I make the chocolate sauce for Nigella's Flourless Brownies a day ahead and warm up when needed? If so, what's the best way of warming the sauce please?

    From the nigella team:

    The chocolate sauce that goes with the Flourless brownies (from Nigella Express) is a mixture of chocolate, cream, coffee and golden syrup and is very similar to a ganache. It is possible to make the sauce a day ahead, and up to a week ahead. Pour the sauce into a heatproof bowl and when it is cool cover it and store in the frige until needed.

    When you reheat the sauce make sure that you use a gentle heat, as if the sauce gets too hot it will turn grainy. If possible remove the bowl from the fridge about an hour before you want to use the sauce, as it will melt more quickly from room temperature. Uncover the bowl and set it over a saucepan of hot water (making sure the bowl doesn't touch the water). Let the sauce melt, stirring regularly, until warm and smooth. You could also heat the sauce in a microwave. Heat on full power in 10 second blasts, stirring in between each blast, until warm and smooth.

    The sauce can also be frozen in an airtight container for up to one month. Thaw overnight in the fridge and reheat as above.

    The brownies are best made on the day. You can bake them an hour or so ahead of serving as they need a little time to set after they come out of the oven and will remain warm for about an hour, as long as they are kept out of cold and drafty spots.
