Clementine Cake by Hand

The intructions for Nigella's Clementine Cake suggest that the cooked clementines are given a "quick blitz in a food processor (or by hand of course)". How does that work by hand?

Our answer

Most of Nigella's cakes, including the Clementine Cake (from How To Eat and on the Nigella website), can be made by hand. If you are making this cake by hand then you need to chop the soft, cooked clementines very finely. Probably the easiest way to do this is to roughly chop the clementines first, then use the "cross chopping" technique (rocking the knife over the fruit, as if you were chopping herbs) to chop the clementines almost to a puree. Try to use a board with a lip, as quite a bit of juice will come out and this needs to be added to the cake batter.

If you have a mezzaluna then this would be a good implement to use as it rocks and chops easily. After the clementines have been pulped then beat the eggs in a bowl until they are frothy and slightly thickened and beat in the sugar, almonds and clementine pulp.
