  • Freezing Cakes

    Please can you tell me whether you can freeze Nigella's Clementine Cake?

    I presume its ok to freeze Nigella's Old Fashioned Chocolate Cake (without the ganache)? Alyson.

    From the nigella team:

    Most cakes freeze well and Nigella's Clementine Cake (from How To Eat and on the Nigella website) and Old fashioned Chocolate Cake (from Feast and on the Nigella website) both freeze well once they have been fully cooled and removed from their tins.

    For the Clementine Cake wrap the whole cake tightly in a double layer of clingfilm (plastic wrap) and a layer of foil. For the chocolate cake wrap each layer individually in a double layer of clingfilm and a layer of foil. Both cakes will freeze for up to 3 months.

    To thaw the cakes, unwrap them and leave them at room temperature on a wire rack. The Clementine Cake will take 4 to 6 hours to thaw and the Old Fashioned Chocolate Cake layers will take 2 to 3 hours to thaw.
