  • Gin And Tonic Jelly

    I was reading Nigella's recipe for Gin And Tonic Gelatin mold, and I was just wondering how far in advance I can make this, and how long after it is made will it last?

    From the nigella team:

    Nigella's Gin And Tonic Jelly (from Domestic Goddess and on the Nigella website) is a simple yet impressive dessert. There are no hard and fast guidelines regarding how long a jelly/gelatin mould will last, however we would suggest that the jelly is consumed within one week of making. This means, for example, that you could make it 2 days in advance of the day of your dinner and keep it for up to 4 days after.

    However it is important that the jelly is kept in the fridge and should be tightly covered or in a sealed container. A jelly will tend to dehydrate in the fridge over time, becoming more rubbery in texture and less pleasant to eat. Once the jelly has been made and chilled/set then cover the mould tightly with clingfilm (plastic wrap). Leftovers are best transferred to an airtight container before refrigerating.
