Gluten Free Ultimate Christmas Pudding

Full question

I want to make Nigella's Utlimate Christmas Pudding recipe (using Pedro Ximenez sherry). But can I use gluten-free flour?

Our answer

Nigella's Ultimate Christmas Pudding (from Christmas and on the Nigella website) is made using fresh white breadcrumbs and plain (all-purpose) flour. Unfortunately we have not made the pudding with gluten-free ingredients so cannot guarantee the results but we believe that it should be possible to use gluten-free ingredients.

The breadcrumbs can be replaced with fresh gluten-free breadcrumbs. For the plain flour we would suggest replacing it with half of a gluten-free plain flour blend and half ground almonds (almond meal). You may also need to check the suet as some are dusted with flour. if you cannot find a gluten free version then replace the suet with the same weight of coarsely grated vegetable shortening or coconut oil. Freeze the fat overnight to make it easier to grate.
