    Hi! I am interested in making the Holiday Hotcake recipe. My family has got a dairy allergic and can not eat butter, cream, milk. Could you please tell me the amounts I need to make it dairy free or are they the same? Many thanks.

    Nigella's Holiday Hotcake With Eggnog Cream recipe (from Nigella Express) is a self-saucing sponge pudding that is served with an eggnog-flavoured whipped cream. At the moment it is difficult to find good dairy-free substitutes for double or whipping cream so you may want to consider an alternative accompaniment, such as your favourite non-dairy vanilla ice cream.

    The cake batter uses sunflower oil already and you can use soy or nut milk instead of the full fat milk - just make sure that the milk is a natural type and not flavoured or sweetened. For the butter that you dot over the surface of the cake batter you can use a non-dairy margarine. The quantities used are exactly the same as for the original recipe.
