  • Instant Chocolate Mousse

    Hi, I have been looking at Nigella's Instant Chocolate Mousse recipe and I am just wodering if the end result a light and fluffy mousse? Also if I make it the night before, do I cover it when I put it into the fridge or would i be better off making it when needed? Thanks    

    Could I use the recipe base for Nigella's Instant Chocolate Mousse and make orange mousse? For example, instead of chocolate in the recipe, add orange juice and some orange zest to make instant orange mousse. Thanks! Twinmom1

    From the nigella team:

    Nigella's Instant Chocolate Mousse (from Nigella Express) is made with marshmallows, melted chocolate and whipped cream. The gelatine in the marshmallows helps the mousse to set, giving a light texture. However the mousse doesn't contain whisked egg whites, which means that the texture is slightly less "fluffy" that one with egg whites, though no less delicious. The omission of uncooked eggs is also a big advantage for many people.

    It should be possible to flavour the mousse with certain ingredients but you do need to be careful not to upset the ratio of ingredients too much. Adding very finely grated orange zest to the marshmallow and chocolate mixture (before you start melting) and replacing 1-2 tablespoons of the boiling water with orange juice could give a subtle chocolate orange flavour, adding a few drops of mint extract instead of vanilla to the cream would give a chocolate mint version and repacing the boiling water with hot, strong coffee would give a mocha version.

    You could also try the Instant Chocolate Orange Mousse that appears in Nigella's new book Nigellissima.
