Mini Meatloaves

Is it possible to freeze the Mini Meatloaves, and if so should the mixture be frozen before cooking, or can it be done before or after cooking? If frozen before cooking, how should I then cook them?

How long do the Mini Meatloves last in the fridge once cooked? Can they be reheated? And can they be frozen? Thanks, Pink 10

Our answer

Nigella's Mini Meatloaves (from Nigella Express and on the Nigella website) should keep for 3 days in the fridge, once cooked. The meatloaves should be cooled and refrigerated as quickly as possible after cooking (and within 2 hours of cooking) and stored in an airight container. We feel that the meatloaves are best eaten cold, they could be reheated but unfortunately they can tend to dry out if not reheated carefully. We would suggest wrapping each meatloaf in a piece of damp kitchen paper (paper towel) and reheating in a microwave in shorts burts, following your microwave manufacturer's guidelines for reheating foods, until piping hot all the way through.

It is possible to freeze the meatloaves either before or after cooking. If the meatloaves have been cooked then cool and chill, as above, and wrap each meatloaf in a layer of clingfilm (plastic wrap) or foil. Put the wrapped meatloaves in an airtight contaier or resealable plastic bag and freeze for up to 3 months. The meatloves should be thawed overnight in the fridge before eating.

Uncooked meatloaves can be frozen. Form the meatloaves and put them on a baking sheet lined with baking parchment (parchment paper). Cover the meatloves with a sheet of clingfilm and freeze until soolid. When solid wrap each meatloaf in a piece of clingfilm or foil. Put the wrapped meatloaves in an airtight contaier or resealable plastic bag and freeze for up to 3 months. To thaw the meatloves unwrap them and put them on a baking sheet lined with baking parchment. Cover loosely with clingfilm or foil and thaw overnight in the fridge. Unwrap and cook, following the recipe instructions, allowing about 2 minutes extra cooking time if they are very cold.
