Panettone Desserts

Hello, I made the Italian Christmas Pudding Cake (with panettone) a few times and it's amazing! thank you for inventing it! Truly life enhancing. Would it be ok to freeze slices of it? Thank you, Kerry.

On New Zealand tv, prior to Xmas 2015, Nigella made a dessert where she started by slicing up a panetonne and lining a tin. She then added other ingredients and baked it in oven. I didn't get the name of the recipe so would you be able to help me find it?

Our answer

Nigella's Italian Christmas Pudding Cake (from Nigellissima and on the Nigella website) is similar to tiramisu with layers of mascarpone and panettone. It can be frozen though generally we would recommend freezing the whole cake in its springorm pan. It should be possible to freeze slices, as long as it is no more than 2 days after the cake has been made and you may prefer to remove the pomegranate seeds as these could become mushy after freezing. You would need to carefully wrap the slices individually in clingfilm (plastic wrap) and lay them on a baking sheet before freezing them. Once the slices are firm they can be transferred to a resealable container and stored in the freezer for up to 1 month. To thaw a slice, unwrap it and put it on a plate. Cover loosely with clingfilm and defrost in the fridge for about 6 hours (the time will depend on the thickness of the slice and the temperature of the fridge). Eat within 24 hours of defrosting.

We suspect that the dish mentioned is Nigella's Panettone Pudding, which is a rich bread and butter style pudding made with panettone and Beaumes de Venise wine. The recipe can be found in Nigella's book Nigella Christmas.
