  • Peppers For Chilli Jam

    I live in Australia and would like to know if Red Peppers are the same as Red Capsicums. Thank you

    From the nigella team:

    The large sweet red peppers used by Nigella in the Chilli Jam (from Christmas and on the Nigella website) are capiscums. In the UK they tend to be sold as "red peppers" in the US as "red bell peppers" and we understand that in Australia and New Zealand they are called capiscums. The recipe also uses hot red chilli peppers.

    When making the jam be sure to use jam sugar with added pectin, or add a powdered or liquid pectin following the instructions on the package. As neither capiscums or chilli peppers contain pectin naturally, the jam will not set unless some is added.
