Portion Sizes for Chocolate Mousse

Hello, I need to make Nigella's Chocolate Mousse for about 120 people to be served in 50ml shot glasses but I'm not sure how to get the quantity correct. Can you help?

Our answer

We assume that you are referring to Nigella's Instant Chocolate Mousse (from Nigella Express and on the Nigella website). The recipe serves 4 to 6 and makes a total of about 700mls (approx 2 3/4 cups). So if you wanted to fill 120 x 50ml (3 tablespoon) shot glasses you would need to make 9 times the quantity in the original recipe, and have a little left over.

We would however warn against making this quantity in one go as you will probably have trouble metling the marshmallows and chocolate evenly and cooling the mixture before adding the whipped cream. The mousse is fairly quick to make so you can do one batch at a time, and certainly no more than double the recipe quantity in one go.
