  • Quivering With Passion Jellies

    I would like to use passion fruit puree instead of fresh passion fruit in the Quivering With Passion Jellies (from Feast). Please can you tell me how much puree I should use instead of the 5 passion fruit suggested in the recipe? Many thanks

    Whilst passionfruits are popular and easy to find in the UK, in some other countries is is easier and more economical to buy passionfruit puree. This can come in chilled packs or frozen. Passionfruits vary in size but one passionfruit yields about 2-3 tablespoons of pulp (with seeds). However in Nigella's Quivering With Passion Jellies recipe (from Feast) the recipe states that you need 250ml/1 cup of pulp, so this is the amount of store-bought pulp that you should use.

    If you have bought frozen passionfruit pulp then you may find it easier to weigh the pulp and you will need 250g. You should also check to see if the store-bought pulp has added sugar. If it has added sugar then taste the pulp as you may need to slightly reduce the amount of sugar in the recipe, or you can add some lime juice to sharpen the taste of the pulp before making the jellies (the lime juice should make up part of the 250ml pulp).
