I am going to make these for a summer fete on Saturday and was wondering if I made them on Wednesday or Thursday how long they would keep for and would they still be good for the fair? Thank you!

As Rocky Road Crunch Bars are made from melted chocolate along with cookies and fruits they keep pretty well. Once the bars have set in the fridge you can slice them up and keep them in an airtight container in a cool place for up to 1 week. They can also be frozen in an airtight container for up to 1 month.
However if the weather is very warm it is possible that the bars will start to melt and could be a bit messy to eat. Make sure that they are kept in a cool place, out of direct sunlight and handled as little as possible. It may be worth cutting the bars into slightly smaller (two-bite) pieces and putting them in paper cupcake or muffin cases. This will minimize the amount of handling of the bars as they can be lifted via the cases, as well as potentially looking attractive if you choose some patterened paper cases.
