Salty Pancake Mix

We just made Nigella's Instant Pancake Mix and it seems salty. Is it meant to be like that?

Our answer

Nigella's Home-Made Instant Pancake Mix (from Nigella Express and on the Nigella website) contains plain flour, baking powder, bicarbonate of soda (baking soda), salt and sugar. The recipe calls for only 1 teaspoon of salt for 600g of flour which is not a high proportion of salt and once the milk and eggs are added to the dry mix then it should not taste too salty.

We are not sure if you tasted the mix in its dry form, but if you did then it could be that the salt has not been distributed properly and the mix needs a good whisk or a shake in its container. We would also suggest tasting the cooked pancakes as the salt will be less pronounced. If the mix is still too salty for your taste then a little extra sugar added to the mix may help, though make sure that you cook the pancakes over a medum to low heat as extra sugar will make the pancakes brown more quickly.
