  • Smaller Chocolate Pavlova

    If I halve the Chocolate Raspberry Pavlova recipe will it still work? Do I need to adjust the cooking time? Thanks.

    From the nigella team:

    Fortunately it is easier to scale down a meringue recipe than a cake recipe and it is possible to halve the quantities of Nigella's Chocolate Raspberry Pavlova (from Forever Summer and on the Nigella Website). You will need to make a smaller meringue disc (around 12cm/5 inches in diameter). 

    You should use the same oven tempertaures for baking the meringue, but the cooking time will be slightly shorter. We would suggest checking the meringue after 45 minutes cooking time. If the meringue is cooked then it will feel dry on the top and crisp at the edges, but still slightly soft inside. The base of the meringue should also peel away from the baking parchment (parchment paper). If the meringue is still sticky on the outside then let it bake for a further 10 minutes and check again.
