Storing Chocolate Cookies

Asked by CaterinaBM. Answered on 8th February 2013

Full question

Dear Nigella Team, I am taking the Totally Chocolate Chocolate Chip Cookies to a dinner party but need to make them 2 days in advance. What is the best way to store them? Thanks in advance and congratulations for the great website! Caterina

Our answer

Most cookies, such as the Totally Chocolate Chocolate Chip Cookes (from Nigella Express), will keep in an airtight container for 3 to 5 days. It is also possible to freeze the cookies once they are baked and cooled. Transfer the cooled cookies to a resealable freezer bag or airtight container and seal tightly. Freeze the cookies.

On the morning of your dinner party, transfer the cookies to a wire rack to thaw. You could, if you like, gently warm the cookies before serving. Put them into an oven preheated to 120c/250F for about 5 minutes.

It is also possible to freeze shaped but unbaked cookie dough and bake the cookies direct from frozen. You may have time just to bake the cookies before the party. Form the cookies on a baking sheet lined with baking parchment (parchment paper) and freeze them until hard. Trasfer the frozen dough to a resealable bag and store in the freezer until needed. Bake the cookies as described in the recipe, adding a couple of minutes to the baking time.
