I have made Nigella's "Moonblush Tomatoes" (Nigella Express, p127) and was wondering what the best way to store them would be, and how long for?

The Moonblush Tomatoes are slow roasted tomatoes, similar to Sunblush (sometimes known as oven roasted) tomatoes sold in some supermarkets and delis. As they still contain some moisture they must be stored in the refrigerator or freezer, otherwise they will turn mouldy very quickly. Once the tomatoes have been cooked they should be carefully transferred to an airtight container and stored in the fridge for up to 3 days. If you completely cover them with olive oil then they should last a week - they should still be refrigerated even if covered with oil. The tomatoes taste better at room temperature so if possible remove them from the fridge 1-2 hours before serving.
It should also be possible to freeze the tomatoes, however the texture could be a little mushy on thawing. This is fine if you want to use the tomatoes for a soup or sauce but not ideal if they are for a salad. Put the tomatoes in an airtight container and cover with oil. Label and freeze for up to 3 months. Thaw the tomatoes overnight in the fridge before using.
