  • Substitute for Bourbon Biscuits (Canada)

    Hello there! I want to make Nigella's Grasshopper Pie (Kitchen, p185) but we don't have bourbon biscuits here in Canada. Could you suggest an acceptable substitute? Thank you!! Sincerely, Nadine Lucas

    From the nigella team:

    Bourbon biscuits are chocolate cookies filled with a chocolate creme. In Canada you can substitute either Oreo Chocolate Creme cookies or Fudgee-O cookies (both made by Christie/Nabisco). Use the regular/original cookies and not the "double stuf"ones. Standard package sizes are 350g so you will not quite need a full package for the recipe (you need 300g for the recipe which is approximately 27 cookies).

    In Canada you will need to use whipping cream as this is the closest equivalent to double cream. It has a lower fat content than double cream which can make it slightly less stable than whipped double cream. Double cream is whipped to soft peaks, you may find it easier to whip the cream to this level then give it one or two extra turns with the whisk before adding the marshmallow mixture, as it will tend to "slacken" slightly more than double cream when other mixtures are added and the combined cream/marshmallow mixture has a tendency to split if it is whisked too much after the two are mixed together.
