Thin Broccoli and Stilton Soup

I made the Broccoli And Stilton Soup but it was so runny that the pieces of chilli just sank to the bottom of the bowl. I followed the recipe to the letter. Is the liquid quantity correct at 1250ml? Though must say that it tasted pretty good!

Our answer

Nigella's Broccoli And Stilton Soup (from Nigella Express and on the Nigella Website) is not a very heavy, thick soup and the quantity of stock (broth) in the recipe is correct (1,250ml/5 cups). If you were using frozen broccoli then it is possible that there was some ice clinging to the broccoli that could have thinned the soup a little more.

Most people have a personal preference for the thickness of soup and if you would prefer the soup to be thicker then reduce the stock to 1 litre/1,000 mls (4 cups). Once you have blended the soup you can always add a little extra stock to get it to the consistency you prefer. The chillis are more of a colourful garnish but should be chopped finely before scattering over.
