Baked eggs, or oeufs en cocotte, are a simple dish made with eggs that are cooked gently in small dishes, such as ramekins. They can be made more luxurious with the addition of a little butter and cream. Nigella takes this a little further by adding a few drops of white truffle oil in her recipe for Oeufs En Cocotte in Nigella Express (p65).

Eggs need to be cooked gently so that they don't turn rubbery, so Nigella suggests putting the ramekins in a water bath. Another way to cook eggs is to gently cook the eggs in a sauce, which lets them poach gently. So you may also like to try Nigella's Eggs In Purgatory recipe (from Nigellissima and on the Nigella website) wher the eggs are cooked in a chilli-spiked tomato sauce.
