Hi can you tell me how long the Chocolate Guinness Cake will keep un-iced - I need to make it a few days in advance as so busy! Will this be ok? Is it best to wrap it in cling film and put somewhere cool? Thanks

Nigella's Chocolate Guinness Cake (from Feast and on the Nigella website) is a very moist cake and keeps fairly well. Un-iced it will keep for 5-7 days but we would prefer to make it up to 2 days in advance so that it is as fresh as possible.
Once the cake is fully cooled then it is a good idea to wrap it tightly in clingfilm (plastic wrap) and then put it in a cake tin or airtight container and leave it in a cool place. The un-iced cake can also be frozen for up to 3 months. Wrap the cake tightly in a double layer of clingfilm and a layer of foil before freezing. To thaw the cake unwrap it and leave it on a wire rack at room temperature for about 4 hours.
