Clementine Cake With Alternative to Clementines

Can I use Sunkist instead of Clementines in the Clementine Cake?

Our answer

Nigella's Clementine Cake (from How To Eat and on the Nigella website) is made from whole boiled clementines that are then made into a puree. Clementines have a very thin skin and this is important for the cake, as if the citrus has a skin with a thick layer of pith then the cake will become too bitter.

Sunkist are a producer and grow a variety of citrus fruits under this brand name. From their range the tangerines and mandarins would be most suitable alternatives to the clementines, as they also have thin skins. It may be possible to use tangelos (a cross between a tangerine and a pomelo) but we suspect that the skin is slightly too thick for this recipe and would prefer to use one of the other alternatives mentioned.
