Curd Cheese in Liptauer

Asked by prufrock56. Answered on 28th December 2011

Full question

What is the curd cheese mentioned in the ingredients for Liptauer in Nigella Bites (p161)? Can cottage cheese be used instead?

Our answer

Curd cheese is a type of low fat soft cheese. It is similar to cream cheese but has a lower fat content (around 6% vs cream cheese at 23%) and tends to have a slightly more tangy taste than cream cheese. Cottage cheese has a similar fat content to curd cheese (around 6%) but has a different texture as you have the small curds present in the cheese.

If you cannot find curd cheese then you can use cottage cheese in the recipe in the same quantity (500g). However we suggest that you blend the cottage cheese in a food processor, blender or with a hand blender until it is almost smooth before beating it with the cream cheese and other ingredients.
