Dundee Cake for Christmas

Dundee cake is a slightly lighter type of cake than the traditional Christmas cake but should keep well for a couple of months if it is wrapped tightly and kept in a cool, dark (but not damp) place. You can "feed" a Dundee cake in a similar manner to a traditional fruit cake - a good Scottish malt whisky would be a great choice but you can use any other dark spirit of your choice. Poke a few holes in the surface of the cake (between the almonds on the top) and brush over the alcohol.

The cake should be wrapped tightly in a double layer of clingfilm (plastic wrap) and a layer of foil and you can put it in a tin or other airtight container if you have one. You can also freeze the cake for up to 3 months - wrap as above and freeze. To thaw, unwrap the cake and leave the cake overnight in overnight a cool room.
