The ginger wine is used to moisten the sponge cake. Ginger wine is a fortified wine made with ginger and the best known brands are Stone's and Crabbie's.

In the UK ginger wine can be bought in most supermarkets and in the US you can find it in larger liquor stores. We believe that you may be looking in New Zealand and it appears that ginger wine may be stocked by a supermarket chain called Countdown. The wine is also available via mail order in New Zealand and Australia.

If you still can't find ginger wine then you could substitute an orange flavoured liqueur mixed with a pinch or two of ground ginger. And if you can't use alcohol then use a combination of orange juice and ground ginger.
