Lamb Ribs With Nigella and Cumin Seeds

Have just been to my butcher to ask for lamb ribs and the only ones they can have are very thin with not much meat on them. Apparently a few people have asked about them (clearly a popular recipe!) so my butchers did call around but the same response from all our local butchers. I wonder if you have suggestions please? Thanks

The lamb ribs used in Nigella's recipe for Lamb Ribs with Nigella And Cumin Seeds (from Simply Nigella) are cut from the breast of the lamb, They are not as big as pork ribs and tend to be thinner. The amount of meat on the bones will depend on how the breast was trimmed. Using the breast bones for cooking is still fairly unusual in the UK.

It may be worth speaking to your butcher and pre-ordering the bones, asking if it possible to trim the breast so that the bones have slightly more meat on them. It may make the bones slightly more expensive, due to the additional meat, but would make them more suitable for this recipe.
