Mini Chocolate Key Lime Pies

Full question

Hi, I have made Nigella's Chocolate Key Lime Pie on a number of occasions and it is always a big hit with my dinner guests. I was thinking of using the recipe to make mini pies which I think would work. I have a 12-cup dessert pan with loose bottom bases and 3 inch diameter cups. How many cheesecakes do you think one quantity of the recipe would make please. Thanks

It should be possible to make mini versions of Nigella's Chocolate Key Lime Pie (from Kitchen) but unfortunately the capacity of the cups in the dessert pan is not mentioned (only the diameter) so it is slightly tricky to assess how much of Nigella's recipe will be needed. Also we have not tried mini versions ourselves so can only give guidelines, rather than a guaranteed recipe.

The filling for the Chocolate Key Lime pie has a volume of about 1 litre/4 cups. Assuming that the dessert pan has about the same capacity cups as a muffin pan then one quantity of the filling should be enough to fill the pan, possibly with a little left over. The crust is more difficult to judge as you will need more crust mixture for small pans. The crust mixture is much easier to make in smaller quantities so we would suggest making the full recipe and using this. If you do not have enough to line all of the dessert pan cups then you should be able to make 1/4 or 1/2 extra of the crumb base to fill the remaining cups. As smaller pies may be a bit more fragile it may also be a good idea to grease the cups of the dessert pan with a little melted butter or flavourless oil before pressing in the crust, to make removal slightly easier.
