Pressure Cooking Ultimate Christmas Pudding

Can you advise please on pressure cooker timings for both the 3 litre pudding and a 2 litre and 1 litre please. I am hoping this will save a bit of time on the day as well as in the initial cooking

Our answer

Unfortunately we have not made Nigella's Ultimate Christmas Pudding (from Christmas and on the Nigella website) using a pressure cooker and it is important that you refer to the manufacturer's handbook for guidance on timings, pressure and amount of water required.

We understand however that pressure cooker times are usually calculated according to the weight of the pudding ingredients rather than the actual volume of the basin used. We would mention that a 3 litre basin sounds a little large so we wonder if you actually mean a 3-pint basin? Nigella's recipe makes approximately 1.5kg of batter for a 1.7 litre/3-pint basin, so if this is divided equally then it will make 1kg for a 1.2 litre/2-pint basin plus 500g for a 600ml/1-pint basin.
