Red Velvet Cake - Food Colour Used

Asked by Dawnfoster. Answered on 11th November 2010

Full question

Hi Please could you tell were I can buy the food colouring used to colour this sponge and also the brand name of the product. Thank you Dawn

Our answer

For Red Velvet cake you need to add a good amount of red food colour to get the right tone and we find that food colouring pastes are better than liquid food colour as they are more intense and so you tend to need less of the paste than the liquid.

Nigella uses Wilton's Christmas Red food colouring paste. It is available in many cake decorating stores in the UK and the US. Sugarflair and Squires Kitchen also do good colouring pastes.
