Salted Caramel Sauce for Buttercream

Would Nigella's Salted Caramel sauce be a good sauce to add to buttercream to use as a filling for a sponge cake?

Our answer

Nigella's Salted Caramel Sauce (on the Nigella website) is perfect for many uses, such as a topping for ice cream, with brownies and drizzled over cakes. It may be possible to add some of the sauce to a buttercream to make a caramel buttercream, but be aware that if you add too much then it can cause the buttercream to split and it will not look particularly attractive.

We would suggest adding 3 to 4 tablespoons of the sauce to around 400g (about 2 cups) of buttercream. To increase the intensity of the caramel flavour we would also suggest spreading a thin layer of the sauce on the lower layer of the cake (before spreading on the buttercream) and then maybe drizzling a little extra sauce over the cake just before serving.
