Where can I buy shredded coconut? I have tried usual avenues but to no avail! I wanted some for the coconut macaroons recipe.

Sweetened shredded coconut is a very common ingredient in the US but is more difficult to find in the Uk. It is moister than desiccated coconut and also the individual shreds of coconut tend to be longer than desiccated. You can find it in some stores in London that sell American ingredients (Panzer's in St John's Wood usually have it and may be able to mail order - see link below). It is also available from some on-line specialists (we have included a suggestion below but others are available). If you are looking for it on-line then Baker's Angel Flake is the best-known brand. Once you have opened the bag of shredded coconut the leftovers should be tightly sealed and stored in the fridge as it does not keep as well as desiccated.
We understand that it may be possible to produce a home-made version of sweetened coconut though we have not tried this and as already mentioned the texture will be slightly different. However if you do want to try this then mix together 35g desiccated coconut, 1 tablespoon icing sugar and 1 tablespoon hot water. Let this mixture stand for 10 minutes before using, the water should be absorbed by the coconut during the standing period.
