Sour Cream in Chocolate Cake

Asked by PSA. Answered on 4th October 2015

Full question

Hi team! Please can you tell me what I can replace the sour cream with in Nigella's OldFashioned Chocolate Cake? Can I use full fat yogurt or buttermilk or more eggs? I am cream intolerant so can't eat it. The question also applies to the icing please - I need a glassy icing but no cream. Please help! Many thanks Sarah

Our answer

Nigella's Old Fashioned Chocolate Cake (from Feast and on the Nigella website) is made with 150ml (2/3 cup) sour cream. As the quantity of sour cream is not that great then a full-fat (whole milk) plain yogurt would be the best alternative and for preference we would use a thick Greek strained yogurt.

Unfortunately the icing on the cake is a little more difficult as any lower fat product, such as yogurt, will split if you heat it with the other ingredients. There are some plant-based cooking creams available now (such as rice cream) and these could possibly be used as an alternative if you can eat these. However it may be better to opt for a different icing altogether and we would suggest looking at the icing used on Nigella's Devil's Food Cake (from Kitchen and on the Nigella website) as this does not use any cream at all.
