  • Steak Slice With Lemon And Thyme For A Buffet

    I would like to serve Nigella's Steak Slice With Lemon And Thyme cold at a buffet - would this work?

    From the nigella team:

    Nigella's Steak Slice With Lemon And Thyme (from Nigella Express and on the Nigella website) is treated slightly differently to a regular marintated steak as the meat is first cooked and then left to rest in a marinade/dressing before it is sliced and served. It is possible to serve this steak cold, however we feel that it is probably at its best when at room temperature, shortly after cooking, partly as the acid in the dressing will affect the proteins in the meat (it will slightly "cook", or denature, the proteins) and if left for too long could mean that the meat turns slighty mushy and unpalatable - particulalry if the steak is sliced some time before serving.

    We feel that Nigella's Vodka Marinated Steak (from Feast and also on the Nigella website) may be better suited to serving cold as it is marinated before cooking. You would not need to make the sauce if you are serving the steak cold, and could slice the cold steak and dress it with a little olive oil, thyme and lemon juice just before serving.
