Storing Vanilla Fudge

Asked by sars2222. Answered on 24th April 2015

Full question

Hi, I'm doing the Vanilla Fudge squares for my wedding favours. I intend on putting them into cellophane bags and tying them with ribbon/elastic. I know you say to keep them in an airtight container to keep fresh but how soon do you think I can put them into the bags? I don't really want to be doing them the night before!! Thank you, the website is amazing

Our answer

Nigella's Vanilla Fudge (on the Nigella website) can be stored in an airtight container for abiut a week, or in the fridge in a container for about a month. The main risk with storing fudge is that it starts to dry out and turn crumbly, though this is unlikely to happen overnight.

If you are putting the fudge into cellophane bags then you can do this 2 to 3 days ahead. Try to seal the bags by tying the ribbon as tightly as you can. Also if it is possible try to put the bags into large plastic boxes or containers (with lids) that will help to keep them a little more airtight. Sitting the bags upright in the boxes should stop them from being crushed too much and would also make them easier to transport to your wedding reception. Store the bagged (and if possible boxed) fudge in a cool, dark place until you take it to the wedding reception.
