Turkey Breast Stuffed With Sausage

Asked by Snook-Shelton. Answered on 4th December 2014

Full question

Hello, In the Turkey Breast Stuffed With Italian Sausage And Cranberries recipe Nigella suggests "Mostarda di Cremona". I have found it with another word after it which indicates what fruit it is made with. Recipes seem to be very few and far between. Some have 1/2 a fruit, e.g. apricot size, others have a small chunk similar to the size of glace pineapple and the jars give the impression of a relish or chutney size of fruit. I would like to know more about this and whether Nigella has a preferred recipe. Thanks, Nichola

Our answer

Nigella's Turkey Breast Stuffed With Italian Sausage And Cranberries (from Nigellissima and on the Nigella website) is a good alternative to a whole roasted turkey and can also be served cold as part of a buffet. Nigella suggests serving the breast with mostarda di Cremona as a nod to the Italian influence, but you could also serve it with your favourite chutneys and relishes or even cranberry sauce.

Mostarda di Cremona is made with different types glace fruits that are steeped in a mustard-flavoured syrup. However there are other regional variations of mostarda di frutta and the fruits will vary according to the region and the fruits may be less varied than the mostarda di Cremona. It is easiest to buy mostarda and unfortunately we don't have a particular recipe that we can recommend. But at this type of year you should be able to find it in good Italian delis, some branches of Waitrose and also on-line.
