MEAT AND FISH

It probably isn’t altogether necessary to scrabble about for producers of organic meat now that supermarkets are more on the ball about stocking properly reared and treated meat themselves, but it can’t hurt. I don’t buy meat unless I know who I’m buying it from and they, in turn, know who is supplying it to them, and are sure that the animals are properly reared (including naturally fed), properly treated and can be surely sourced (that’s to say the provenance of each creature can be checked).

You should always find out if there is a farm near you that you can build a relationship with and get your meat from direct, or if you live in the city, a faraway one you can build a telephonic relationship with (often the best kind) instead.

I use a rigid griddle for cooking meat a lot. Scanpan griddles have the virtue of being lighter than cast iron ones and much easier to wash up, too. For fish and pancakes you will need one of their smooth griddles too.

HERBS AND SPICES

You may have noticed, and I have made no attempt to hide it, that I have gone all out for pink peppercorns in Feast – indeed, in my life in general. Purists will sneeringly tell you that this is not proper pepper and just a whimsical fantasy. This may be so, but I like to use it and if you do you will need to find a good supplier, as you will for the mixed herbs with lavender that I use for the St Tropez chicken and many of the recipes in the Eid chapter.
