CARAMEL CROISSANT PUDDING

INGREDIENTS

2 stale croissants
100g caster sugar
2 x 15ml tablespoons water
125ml double cream
125ml full-fat milk
2 x 15ml tablespoons bourbon
2 eggs, beaten
Serving Size : Serves 2 greedy people
INTRODUCTION

If you have any stale croissants in your kitchen, you are in for a treat. Deeply luscious and easy to make, this is an all-too manageable indulgence.
METHOD

1.Preheat the oven to 180°C/gas mark 4.
2.Tear the croissants into pieces and put in a small gratin dish; I use a cast iron oval one with a capacity of about 500ml for this.
3.Put the caster sugar and water into a saucepan, and swirl around to help dissolve the sugar before putting the saucepan on the hob over a medium to high heat.
4.Caramelize the sugar and water mixture by letting it bubble away, without stirring, until it all turns a deep amber colour; this will take 3–5 minutes. Keep looking but don’t be too timid.
5.Turn heat down to low and add the cream – ignoring all spluttering – and, whisking away, the milk and bourbon. Any solid toffee that forms in the pan will dissolve easily if you keep whisking over low heat. Take off the heat and, still whisking, add the beaten eggs.
6.Pour the caramel bourbon custard over the croissants and leave to steep for 10 minutes if the croissants are very stale.
7.Place in the oven for 20 minutes and prepare to swoon.
ADDITIONAL INFO

If you don’t have any bourbon in the house, first may I say, please consider it, and second, replace it, rather, with rum; Scotch whisky may seem the obvious substitute but it would be the wrong one I feel.

This is my must make dessert when it's cold outside and all I want is something simple but incredibly comforting. Even the cooking process is oddly comforting what with stirring the custardy base and inhaling the warm smell of bourbon... Delicious!

Absolutely wonderful!! Plus my husband suggested adding the Sultans soaked in rum or burbon. I prefer the rum!! it was wonderful. Add them at the end before you bake.

This is gorgeous—the texture is something to behold. But it is very, very sweet; card-carrying sweet tooths (like my mum) will adore this! It'd also serve nearer four than two, in my experience. It was a snap to whip up, so I will definitely make this again sometime!

This actually wasn't as sweet as I thought it would be. This was the first time I made it and although I let the sugar brown too much (it had a kind of burned taste.. almost bitter) I know that next time when I make this I don't let it brown too much it will taste AMAZING. I added a pinch of salt when I added the sugar to the water..so good

I absolutley love this recipie. When i first made it i immediatley ate half of it. Then, in true Nigella style- i woke in the middle of the night and devoured the rest. This is one of my favourite comfort foods, and is so easy to make. I now find myself fresh crossants for the pudding- i just can't wait.

I had some croissant left over after making this dish. But I did not have cream or rum in the house. So I had to improvise. 2 croissants and raisins soaked in malibu in the dish. Then I warmed up a tin of condensed milk and got the egg mix - in this went over the croisants and then in the oven. It was delicious. My husband who is not a dessert eater asked me if there was more and can I make it again.

Absurdly good! For fear of sounding like a pompous foodie, I made this with leftover homemade croissants, which worked a treat. And I fully appreciate what Nigella means about the bourbon. It added the perfect twang that Scotch just would not be able to replicate. My husband has already earmarked the leftovers (I doubled the recipe or there would be no leftovers, trust me) for breakfast.

I made this tonight and it was so easy and so incredibly yummy! I scattered a few frozen raspberries over the croissants before adding the custard, and used frangelico instead of bourbon. With a scoop of vanilla ice-cream, this was heaven on a plate!

I made this one today; but I serve it warm with an ice cream I made using the same ingredients (with 3 eggs, and didn't use milk, just cream) of que toffee mix. Amazing!
