CHERRY CHEESECAKE

INGREDIENTS

125g digestive biscuits
75g soft butter
300g cream cheese
60g icing sugar
1 teaspoon vanilla extract
1/2 teaspoon lemon juice
250ml double cream
1 x 284g jar St Dalfour Rhapsodie de Fruit Black Cherry Spread
Serving Size : Serves 6–8
INTRODUCTION

This is not the trad baked cheesecake that requires patience and lots of spare time. No, this is fresh, quick, simple and - best of all - irresistibly scrumptious!
METHOD

1.Blitz the biscuits in a food processor until beginning to turn to crumbs, then add the butter and whiz again to make the mixture clump.
2.Press this mixture into a 20cm springform tin; press a little up the sides to form a slight ridge.
3.Beat together the cream cheese, icing sugar, vanilla extract and lemon juice in a bowl until smooth.
4.Lightly whip the double cream, and then fold it into the cream cheese mixture.
5.Spoon the cheesecake filling on top of the biscuit base and smooth with a spatula. Put it in the fridge for 3 hours or overnight.
6.When you are ready to serve the cheesecake, unmould it and spread the black cherry over the top.
ADDITIONAL INFO

Even in the spirit of retro-accuracy, please do not be tempted to open a jar of cherry pie filling over the cake. I use some French cherry concoction that seems to be pretty universally available and has no added sugar, but anything labelled “conserve” as opposed to “jam” should be safe.

Thank you Nigella. Scrumptious, melt in your mouth cheesecake. I made a strawberry puree/culie for the topping with rose syrup and honey. Perfect for the cheese cake as we do not have anything close to your fruit spreads in South Africa.

This cheesecake is even better when you leave it for a day or two. I like to make just the cheesecake without a main topping, serving it with several little jugs of indivual sauces for guests or simply, when I just can't decide what topping I want. I admit to having eaten a whole one!!

This cheesecake is great, but NOT the suggested topping (sorry Nigella). Waitrose fresh compote served separately is lovely or - oh God she'll never forgive me - cherry pie filling!!

After so many trials and tribulations to find a cheesecake that actually tastes and looks good I made this last night (but with Raspberry St Dalfour instead of Cherry) and tried it out on my work colleagues today. The verdict was unanimous - "You can make that again" - which is high praise and recommendation as I am the official cake maker for the Birthday Club. Thank you Nigella - I was in despair at ever finding a cheesecake recipe good enough!

I made this on the weekend and it disappeared pronto. As I'm wheat intolerant I substituded the base with oat biscuits plus 3 tablespoons of golden caster sugar (they are quite bland biscuits so it needs the added sugar). I'm fine with oats though others may not be able to tolerate them. I used the St. Dalfour Strawberry jam and it was delicious. Will definitely make again.

This is actually much simpler than I thought!! It's the first cheesecake I've ever made yet sooo delicious. I replace the cherry spread with blackberries and oreo's instead of digestive biscuits. It went marvelous and everybody love it. Can't wait to try another simple yet delicious recipe from you!!

This Cheesecake is truly scrumptious, I first made it for the family when I hosted a new years day party and it went down a treat, I have since made it for several occasions and it never fails to impress. It also works beautifully with lemon curd spread on the top. It is so quick and simple to make but looks fantastic and tastes divine....

This is a beautiful cheesecake recipe, more so because I can't seem to make a baked cheesecake. There's no baking involved in this recipe at all and it is fool-proof! I've made this a few times and it is such a stress-free dessert. Highly recommended.
