MUSTARD PORK CHOPS

INGREDIENTS

2 pork chops, approx. 450g total
2 teaspoons garlic oil
125ml cider
1 x 15ml tablespoon grainy mustard
75ml double cream
Serving Size : Serves 2
METHOD

1.Cut the fat or rind off the chops, and then bash them briefly but brutally with a rolling pin between two pieces of clingfilm to make them thinner.
2.Heat the oil in a heavy-based pan and cook the chops over a moderately high heat for about 5 minutes a side. Remove them to a warmed plate.
3.Pour the cider into the pan, still over the heat, to de-glaze the pan. Let it bubble away for a minute or so, then add the mustard and stir in the cream.
4.Let the sauce continue cooking for a few minutes before pouring over each plated pork chop. If you’re having gnocchi with it, make sure you turn them in the pan to absorb any spare juices before adding them to your plates.
ADDITIONAL INFO

To soak up the juices, and to act as a fantastically quicktime potato substitute, I serve up gnocchi alongside. You could always add a little lemony fennel, sliced thinly, or a green salad if you’re in the mood.

Was a little worried about how the mustard would taste but, oh goodness, it was great! I forgot to buy gnocchi to try in the recipe, but I certainly will next time. A winner!

I make a variation of this if I don't have pork chops but have diced pork instead. The flavours are the same and it still tastes just as good. Also I don't use double cream, as I'm not a fan of cream, instead use lite-sour-cream instead. Works a treat and still tastes fab.

As others have mentioned, this might be one the quickest meals I can put together but still be a delicious and substantial dinner. Just perfect for during the week. I always thought that you had to marinate meat before cooking it, but the creamy mustard sauce is all you need for flavour.

This is a lovely way to do pork chops! I can't bring myself to have the gnocchi with them as that feels a little too 'alien' to me ;-) but they were lovely with parmentier potatoes and a fennel salad. DH would prefer a thicker sauce, but the whole family cleaned their plates. Mmmmm...
