CHOCOLATE CHIP MUFFINS

INGREDIENTS

250g plain flour
2 teaspoons baking powder
Half-teaspoon bicarbonate soda
2 tablespoons best quality cocoa
175g caster sugar
150g chocolate chips (plus more for sprinkling later)
250ml milk
90ml vegetable oil
1 large egg
1 teaspoon real vanilla extract
Serving Size : Makes 12
INTRODUCTION

As featured on the ITV Nigella show. From Nigella's book Feast.
METHOD

1.Preheat the oven to 200C and fill a 12-bun muffin tray with paper cases.
2.Weigh out the dry ingredients into a large bowl. Pour all the liquid ingredients into a measuring jug.
3.Mix both together – it will be a runny batter - then spoon into waiting muffin cases.
4.Sprinkle more chocolate chips on top then cook for 20 minutes or until the muffins are risen and springy.

I made these muffins for the family and my boyfriend and they all loved them!!! Might add some golden syrup next time to make them even more gooey and moist!!! YUM YUM!!! Nigella!! :)

These muffins are really delicious. I often make them and bring them to work and people think I have bought them from a shop. My Grandchildren love them and the rest of the family do too. They are so easy to make.

My muffins turned out a weird texture, and definitely not moist and soft. As far as I know, I followed all the instructions... Any advice how to improve this?

has anyone tried making these in a mini muffin tin and does it work?am trying to find recipes for mini muffins and there hardly seem to be any!

i tryed ur muffin resipie and when i took them out the oven they wernt cooked i done every thing the respie says to do it may be because i used a fan assised oven so i just put them bk in for a bit longer and it was perfict thx :)

I just made the muffins and they are the best chcocolate muffins i have made before very very light and mosit. Unlike shop brought ones they are super light and not heavy.

made these muffins but they didn't rise to a huge muffin top, is this right or should they be really high, somebody help......tasted fab though

I have some of these in the oven right now, so far the process has been so easy, with ingredients that most would already have lying in their pantry etc. I will come back and give more feedback when they are out of the oven and have been taste tested. My boys enjoyed licking the wooden spoon, I had to use 3 of course. :)
