HOME MADE INSTANT PANCAKE MIX

INGREDIENTS

FOR THE PANCAKE MIX
600g flour
3 x 15ml tablespoons baking powder
2 teaspoons bicarbonate of soda
1 teaspoon salt
40g vanilla or caster sugar
TO MAKE THE BATTER AND THE PANCAKES
For each 150g pancake mix, add and whisk together:
1 egg
250ml semi-skimmed or full-fat milk
1 x 15ml tablespoon melted butter
Serving Size : Makes 15 pancakes, each about 8cm in diameter
INTRODUCTION

I find this a real life-safer. I so often have crowds of children sleeping over at the weekend, so I make a container full of this and then I just have to whisk in egg, milk and melted butter to a cupful whenever I need a breakfast's worth of pancakes. Serve with the syrup of your choice.
METHOD

1.For the Pancake mix: Mix all the ingredients together and store in a jar.
2.When ready to make the pancakes, proceed as follows: Heat a flat griddle or pan with no oil.
3.Spoon drops of 1 1/2–2 tablespoons of batter onto the hot griddle or into the pan and, when bubbles appear on the surface of the little pancakes, flip them over to make them golden brown on both sides. A minute or so a side should do it.

This is a wonderfully easy recipe. I made this for the 1st time this morning and this is the 1st time I haven't burnt the pancakes. The blueberry maple syrup is divine!

I made these the other day two ways, firstly to freeze liquid contents then defrosted and cooked them. Wonderful. Secondly, made then then froze them under sheets of greaseproof paper, then defrosted and cooked. Lovely too. So easy and saving time when friends come next week ! Just got to take out of freezer night before and toast ! Yummy !

Hi I made the mix, but is it just me or do they seem a little salty ? I even re checked the ingredients. Any advice ?

I chose to use this recipe for a fundraiser at work. I cooked them and served them with maple syrup and they were devoured. I made 60 pancakes!

This is a fabulous mix. Love the resulting pancakes and the blueberry syrup that accompanies them in the book is so simple yet sooooo delicious :)

These went down a treat with 10 hungry boys including 6 teenagers.I had to make another batch of mix up !!! I used the strawberry sauce you have with your french doughnut toast. 10 out of 10 . I dont like strawberries but with your pancakes .....magnifique !!!

What could be easier! These are beautiful pancakes and just perfect with the Blueberry Syrup from Nigella Express, but just as wonderful with lemon and sugar or maple syrup. Love this recipe!

I loved this recipe but decided to change a bit instead of using 1 egg i used the product no-egg and also decided to add 2 tablespoons of sugar per 150g mix.
